Sernik na zimno z brzoskwiniami. Cheescake with peaches without baking.

To moje drugie podejście do tego sernika. Pierwszy wyszedł stanowczo za tłusty jak na mój gust, dlatego teraz użyłam lekkiego serka 0% i tylko śmietana jest tłuściutka. Tym razem wyszedł pyszny. Moja forma ma 26cm średnicy, dlatego nie jest najwyższy. Oczywiście mniejsze formy są dopuszczalne.

This is my second attempt to this cheese. First time it came out far to greasy as for my taste. This time I used like 0% and just the cream is full fatty one. And this time was delicious. My form has 26cm in diameter – that’s why it is not too tall. Smaller form are absolutely allowed ;).


Składniki:
Kruchy spod:
  • 200 g herbatników
  • 100 g masła
Masa sernikowa:
  • 500 g chudego sera na serniki (lub quarku)
  • 300 ml śmietany 36%
  • 1 torebka cukru waniliowego
  • 200 g cukru pudru
  • 10 g żelatyny
  • 1 puszka brzoskwinie
Ingredients:
Crust:
  • 200 g biscuits
  • 100 butter
Cheese filling:
  • 500g low fat cream cheese (or quark)
  • 300 ml 36% cream
  • 1 vanilla sugar (about2 tbs)
  • 200 g icing sugar
  • 10 g gelatine
  • 1 tin peaches





Przygotuj spod: Pokruszyć ciastka w blenderze, lub w wrzucić do grubego worka i tłuc ile wlezie ;) Mogą pozostać mniejsze kawałki. Przesypać wszystko do miski, dodać bardzo miękkie masło i dokładnie wymieszać. Spod formy wyłożyć papierem do pieczenia i wykleić dokładnie powstała masa. Włożyć do lodówki na czas przygotowywania masy serowej.

Przygotuj masę serowa: W dużej misce wymieszać mikserem ser z połową cukru i cukrem waniliowym. W osobnej misce ubić śmietanę na sztywno z reszta cukru, dodać do sera i delikatnie wymieszać.

Odcedzić brzoskwinie i pokroić na mniejsze cząstki. Pozostały syrop przelać do mniejszej miseczki, dodać żelatynę i rozpuścić w kąpieli wodnej. Rozpuszczona żelatynę powoli wlewać do masy serowej ciągle mieszając mikserem. Na końcu dodać kawałki brzoskwiń i wszystko wymieszać łopatką. Wylać powstała masę na schłodzony spod i wstawić do lodówki na minimum 4h (najlepiej na cala noc).




Prepare crust: Crush cookies in a blender, or throw them in a thicker plastic bag and bash them hard until they cant take it any more ;) You can leave some bigger bits. Place everything in a bowl, add very soft butter and mix together. Place banking paper on the bottom of the form, cover with crumbs, press carefully. Leave the tray in a fridge for the time of preparing cheese filling.

Prepare filling: Using and electric mixer mix cheese with half of the powder sugar and vanilla sugar in a large bowl. In another bowl whip the cream with the rest of the sugar, add to cheese paste and mix together on lower speed.

Drain peaches and chop into smaller pieces. Remaining juice place in a small bowl, add gelatin and melt in water bath. When it's ready slowly add to our cheese filling and keep mixing on low speed. In the end throw in chopped peaches and mix with a spatula. Pour over the cooled crust and place back in the fridge for at least 4h (or a whole night).
